Ethiopia Sidama Bombe White Honey

From Sidama, Ethiopia — a landrace varietal, white honey process, part of Apex's Bombe special prep lineup.

This lot comes from the Bombe kebele, on the slopes of Bombe Mountain in Sidama's Bensa district — an area served by the Testi Ayla Washing Station, founded in 2010 and now part of the Testi group. The station works with roughly 375 smallholder farmers, each farming an average of about 2.5 hectares, growing local Mikicho and Setami varieties alongside the more familiar heirloom types.

Tasting notes: Dried cranberry, yellow cherry, and hibiscus, with a peach and tonic-water brightness.
